Italian Ground Sausage

This is a good one to throw into pasta, marinara, pizza, lasagna! It can be as hot or mild as you’d like. I’ve used this recipe countless times for bolognese, lasagna, spaghetti and meatballs.


3 lb Ground pork, ground turkey, or ground chicken
3 Tbs Red wine vinegar
1 Tbs Salt
1 Tbs Ground black pepper
1 1/4 Tbs Dried Parsley
1 Tbs Garlic Powder
1 Tbs Onion Powder
1 Tbs Dried Basil
2 Tsp Paprika
2 Tsp Red Pepper Flakes
3/4 Tsp Ground Fennel Seed
1/4 Tsp Brown Sugar
1/8 Tsp Dried Oregano
1/8 Tsp Dried Thyme


  1. Brown the 3 pounds of meat.
  2. Sprinkle in the remaining ingredients.
  3. Simmer for 15 – 20 minutes on low.
  4. Add into pasta dish of choice or eat plain!
