Vegetable & Lemon Chia Stir Fry

Loaded with a variety of vegetables & flavors.



Ingredients for Stir Fry:

2 Packs of Gluten Free Spaghetti Noodles
2 Tbsp. Olive Oil
½ Tbsp. Minced Garlic
2  Tsp. Red Pepper Flakes
3 Cup Baby Bok Choy
1  Tsp. Dried Ginger
1  Tsp. Sesame Oil
4  Tsp. Sesame Seeds
3 Cup Green Beans
1 Cup Frozen Corn
2  Tsp. Dried Parsley
Salt & Pepper, to taste


  1. ​Cook noodles in boiling water. (Keep in mind that GF Noodles stick together, so you will have to stir consistently while they are cooking.)
  2. Once the noodles are cooked, mix olive oil, salt, pepper, garlic and red pepper flakes in a bowl and set aside.
  3. Sauté bok choy, ginger and sesame seeds in the sesame oil. Once tender, add the bok choy to the bowl of noodles.
  4. Sauté green beans and corn with salt, pepper, red pepper flakes and parsley.
  5. Once the veggies are cooked, add everything into your saute pan and mix together. Then add the lemon chia seed dressing and let it simmer for a few minutes on low heat.

Ingredients for Lemon Chia Seed Dressing:

½ cup Lemon Juice
½ cup Water
4 Tbsp. GF Soy Sauce
3 Tbsp. Honey
2 Tbsp. Black Chia Seeds


  • Whisk ingredients together and add to your stir fry mix..
