Slow Cooker Mongolian Chicken Or Steak

This a favorite meal prep in our house because it’s so easy to quickly throw together and leave in the crock pot. I usually use chicken breast, and we like to enjoy it over rice or creamy mashed potatoes!


 

 

Ingredients:

3-4 lb Chicken Breast or Flank Steak
½ Cup Corn Starch
3 Tbsp. Olive Oil
1 ½ Cup GF Soy Sauce
1 ½ Cup Water
1 ½ Cup Brown Sugar
2 Cups Shredded Carrots
1 Cup Shredded Spinach
Salt, Pepper, Garlic & Red Pepper Flakes to taste
Green Onion for Garnish

Directions:

  1. Rinse and place the meat/poultry into the slow cooker.
  2. Add carrots and spinach to the pot.
  3. Mix together the remainder of the sauce ingredients into a small bowl.
  4. Pour the sauce over the meat and cook on low for 6 to 8 hours, until the meat/poultry is tender.
  5. Serve over rice or mash potatoes. Garnish with green onions.
