Grandma’s Gluten Free & Dairy Free Gingerbread Cookies

Gluten free & Dairy Free gingerbread cookies!


Ingredients:

3 Cups

Sifted flour – King Arthur Gluten-Free All-Purpose Baking Mix

2 Tsp

Baking Powder

½ Tsp

Baking Soda

¼ Tsp

Salt

1 Tsp

Cinnamon

1 Tsp

Ginger

1

Egg

2/3 Cup

Molasses

2/3 Cup

Packed Brown Sugar

½ Cup

Melted Butter

Directions:

  1. In a small bowl, sift together flour, baking powder, baking soda, salt and spices. Set aside.
  2. In a large bowl, beat egg and blend in molasses and brown sugar. Add in melted butter and mix well.
  3. Stir in flour mixture a little at a time, and blend to form a smooth dough.
  4. Cut dough in half.
  5. Roll 1/4” thickness and cut with cookie cutters.
  6. Place on a greased cookie sheet.
  7. Bake at 350 degrees for 8-10 minutes.
  8. Decorate when cool.

Ingredients for Cookie Icing:

1 Cup

Sifted Powder Sugar

2 Tbs

Almond Milk

2 Tbs

Light Corn Syrup

Directions:

  1. Mix Together and add food coloring if desired.
