Chimichurri Chicken Over Rice
This is an interesting one. We have made this a couple times over the weekend, and it’s great over white rice.
|1/2 Cup||Olive Oil|
|2 Tbs||Red Wine Vinegar|
|1/2 Cup||Finely Chopped Parsley|
|3-4 cloves||Chopped Garlic|
|2||Small Red Chilies, deseeded and finely chopped|
|3/4 Tsp||Dried Oregano|
Mix together, marinade with diced chicken. Pan fry, and serve over rice.
