Chimichurri Chicken Over Rice
This is an interesting one. We have made this a couple times over the weekend, and it’s great over white rice.
Ingredients:
1/2 Cup | Olive Oil |
2 Tbs | Red Wine Vinegar |
1/2 Cup | Finely Chopped Parsley |
3-4 cloves | Chopped Garlic |
2 | Small Red Chilies, deseeded and finely chopped |
3/4 Tsp | Dried Oregano |
1 Tsp | Salt |
½ Tsp | Pepper |
Directions:
Mix together, marinade with diced chicken. Pan fry, and serve over rice.
