Thanksgiving Meal Prep

It’s turkey time! Who says Thanksgiving dinner has to be a once a year thing? Thanksgiving dinner is my favorite type of food and I’ve gotten really good at meal prepping this throughout the holiday season, so I can enjoy it more than once a year. This meal prep recipe includes slow cooked turkey & spinach mashed sweet potato. Feel free to add on more sides!

*Helpful tip – Love turkey, but don’t want to deal with the whole bird? Costco sells awesome boneless turkey breasts that are perfect for throwing in the slow cooker. Take a look at my recipe below & the photos to see what I’m talkin’ about!


Ingredients for Slow Cooked Turkey:

2 Tbsp. Vegan Earth Balance Butter
½ Tbsp. Honey
Squirt of Fresh Lemon
Pinch of Salt, Pepper, Garlic, Red Pepper Flakes, Rosemary & Thyme

Directions:

  1. Wash and prep the turkey. Place it in the slow cooker with the above ingredients mixed well.
  2. Slow cook on low for six hours, or until the meat is tender.

Ingredients for Spinach  Mashed Sweet Potato:

4 Sweet Potatoes, peeled and boiled
2 Tbsp. Vegan Earth Balance Butter
2 Cup Spinach, chopped
Salt & Pepper, to taste.

Directions:

  1. Peel and boil the potatoes until they are soft.
  2. Mash and whip together the chopped spinach, salt, pepper and butter.
