Vegan Lemon, Garlic & Veggie Pasta

The other day I was throwing together a quick pasta meal for my husband, and I hadn’t intended to make it a blog post because I was just throwing together simple ingredients from the kitchen. It ended up being really tasty and colorful. I took a quick picture and wanted to share this simple recipe that I threw together. My husband was staying away from cheese, so this one can be prepared vegan or topped with Parmesan if you’d like.

Throw together Ingredients:

Gluten Free Penne Pasta
A dash of olive oil (I used a blend of lemon infused olive oil, garlic infused olive oil and a little bit of regular olive oil)
Salt & Pepper, to taste
Sautéed Vegetables (Shredded Carrots, Trader Joes Sun Dried Tomatoes, Chopped Green Beans)
Sprinkle of dried or fresh herbs (Garlic, Italian Seasoning, Red Pepper Flakes, Basil)
Parmesan to sprinkle on top.
