Vegan Lemon, Garlic & Veggie Pasta
The other day I was throwing together a quick pasta meal for my husband, and I hadn’t intended to make it a blog post because I was just throwing together simple ingredients from the kitchen. It ended up being really tasty and colorful. I took a quick picture and wanted to share this simple recipe that I threw together. My husband was staying away from cheese, so this one can be prepared vegan or topped with Parmesan if you’d like. |
Throw together Ingredients:

Gluten Free Penne Pasta |
|
A dash of olive oil (I used a blend of lemon infused olive oil, garlic infused olive oil and a little bit of regular olive oil) |
|
Salt & Pepper, to taste |
|
Sautéed Vegetables (Shredded Carrots, Trader Joes Sun Dried Tomatoes, Chopped Green Beans) |
|
Sprinkle of dried or fresh herbs (Garlic, Italian Seasoning, Red Pepper Flakes, Basil) |
|
Parmesan to sprinkle on top. |
