Veggie Taco/Burrito Mix

I’ve been eating vegetarian for a few weeks now and still crave Mexican food from time to time. I tried replacing meat with some of my favorite veggies, and it was a hit!


 

Ingredients:

5 Small Red Potatoes
2 Cups Riced Cauliflower
2 Green Zucchini
1 Can Black Beans
1 Packet Taco Seasoning
Tortillas
Cheddar Cheese (Optional)

Directions:

Dice the potatoes and boil them in a pot for 30 minutes or until they are soft.

While the potatoes are cooking, dice the remaining vegetables and mix them together in greased skillet on low, until they are soft.

Once the potatoes are soft, add them to the skillet with the mixed vegetables.

Add the taco seasoning with a small amount of water.

Once everything is tender, you can build your burrito. Top with lettuce, spinach, cheddar cheese, tomatoes, avocado, or any other toppings of your choice.
