Quinoa Veggie Scramble with Cilantro Lime Dressing

Quinoa has become a staple in my diet ever since I’ve gone vegetarian. It’s super food nutrition, versatile flavor and effortless cook time has made it easy to whip up  yummy scrambles to eat throughout my week.

 


Ingredients Quinoa Scramble:

3 Cups Quinoa
4 Sweet Potatoes, Diced in Cubes
2 Cups Corn
2 Cups Cherry Tomatoes
1 Cup Spinach, Chopped
1  Tsp. Red Pepper Flakes
1  Tsp. Cumin
2 Garlic Cloves, Minced
Pinch of Parsley
Salt & pepper, to taste

Directions:

  1. Cook quinoa as directed on the package.
  2. Boil your sweet potatoes for 30 minutes, or until soft.
  3. Once the quinoa and sweet potatoes are cooked, add all other ingredients and mix together well

Ingredients for Cilantro Lime Dressing:

1 Jalapeno Pepper, seeded and chopped
1 Garlic
½  Tsp. Dried Ginger
¼ Cup Lime Juice
1/3 Cup Honey
2  Tsp. Balsamic Vinegar
½  Tsp. Salt & Pepper, to taster
1/3 Cup Cilantro Leaves
1/3 Cup Spinach
½ Cup Olive Oil

Directions:

  • Pulse the above ingredients in a blender until you have a nice consistency.
