Avocado & Herb Pesto Pasta

Easiest & creamiest pasta that everyone will enjoy.


12 oz Barilla Gluten Free Elbow Pasta
1 Ripe Avocados, halved, seeded and peeled
½ cup Fresh Basil Leaves
½ cup Fresh Spinach
¼ cup Fresh Parsley
2 cloves Garlic Cloves
2 Tbs Lemon Juice
1 cup Cherry Tomatoes, halved
3 Tbs Sun Dried Tomatoes
1/3 cup Olive Oil
Salt & Pepper to taste


1.     Cook pasta according to package instructions; drain well.

2.     To make the avocado sauce, combine avocados, basil, spinach, parsley, garlic, lemon juice and oil in the blender.

3.     Season the sauce with salt and pepper, to taste. If the sauce it too thick, add water to thin it out.

4.     In a large bowl, combine pasta, avocado sauce, cherry tomatoes and sun dried tomatoes. I also added a few basil, spinach and parsley leaves.

5.     Serve immediately.
