Lemon, Garlic & Fresh Herb Whole chicken

Fresh lemon, garlic & herb chicken in the slow cooker.

The whole chickens from Costco are prefect for my weekly meal prep! They are really inexpensive and they make a decent amount of chicken. I threw this recipe together last minute, and the fresh ingredients made it delicious. Once the bird cooks, you can add fresh roasted veggies as a side and you have a great meal to eat throughout the week. I rarely use actual measurements for my recipes, but below is the recipe. You can adjust everything based off of personal taste preference.


 

Ingredients:

Fresh lemon
Minced Garlic
Baby Red Onions
Celery
Dried herbs – sage, basil, parsley, rosemary, thyme, etc.
Earth Balance Vegan Butter

Directions:

1.     Mix the vegan butter, herbs, garlic in a cup & add it underneath the skin. (Since I don’t eat the skin, I add the majority of the seasoning underneath the skin. If you eat the skin, you can add the mixture on top of the entire chicken as well.)

2.     Add lemon juice, lemon slices, garlic, onions to the outside. The onions that I used are baby pearl red onions from Super King Markets.

3.     Stuff bird with celery.

4.     You can also add a few slices of lemon in between the skin and chicken

5.     Add some chicken broth to the pot so it doesn’t dry out

Cook in a crock pot on low for 8 hours!
