Lemon, garlic and herb pulled chicken

This week’s meal prep – lemon, garlic, spinach & herb chicken. This slow cooker recipe was really easy to make. I enjoyed it throughout the week served over rice or noodles.



6 Chicken Breasts (boneless & skinless)
2 Tbsp. Earth Balance Vegan butter, melted
1 Lemon, juiced
¼ cup Chicken Broth
3 cup Spinach, finely chopped
Dried herbs – garlic, oregano, parsley
Salt & Pepper, to taste


  1. Mix everything except the spinach, and add it to the crock pot.
  2. Cook on low for 8 hours
  3. Turn off  the crock pot and add 3 cups of the spinach. Let it cool & serve over rice or noodles.
