Lemon, garlic and herb pulled chicken
This week’s meal prep – lemon, garlic, spinach & herb chicken. This slow cooker recipe was really easy to make. I enjoyed it throughout the week served over rice or noodles. |

Ingredients:

Chicken Breasts (boneless & skinless) |
2 Tbsp. |
Earth Balance Vegan butter, melted |
1 |
Lemon, juiced |
¼ cup |
Chicken Broth |
3 cup |
Spinach, finely chopped |

Dried herbs – garlic, oregano, parsley |

Salt & Pepper, to taste |
Directions:
- Mix everything except the spinach, and add it to the crock pot.
- Cook on low for 8 hours
- Turn off the crock pot and add 3 cups of the spinach. Let it cool & serve over rice or noodles.
